So here is the first of my promised projects!
About 2 cups of diced tomatoes
1 garlic clove
1/4 of an onion
Basil to season
Oregano to season
Dice onions into small pieces, cook on skillet with EVOO until brown. Add diced tomatoes and rest of ingredients. Cook until sauce thickens and the flavors have mixed well.
To can this sauce.
While sauce is cooking, sanitize cans in a large pot. Boil water for 30 minutes.
NOTE: star boiling the water with the can in the lot so as to not break the glass!
The sauce should be finished and cooled by the time the cans are sanitized. Fill the cans till 1/4 in is left. Cover with the Lids and sealing rings. Again set in large pot with water over the Lids. Boil for 90 minutes. Remover from water and voila! Tomatoe sauce for almost any pasta dish that can be added too and mixed with almost anything to make a great dish!
